INGREDIENTS

  • 2 c. flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 c. white sugar
  • 1 c. brown sugar
  • 3 eggs
  • 1 c. oil
  • Grated rind & juice of 1 lemon, or 1 tbsp. juice
  • 1 can crushed pineapple, drained
  • 1 c. grated carrot
  • 1 c. raisins
  • 1 c. walnuts

DIRECTIONS

  1. Sift first 6 ingredients into small bowl.
  2. Beat next 7 ingredients together; add to dry ingredients, mixing well.
  3. Pour into 9x13 inch pan and bake at 325 degrees F. for 1 hour.
  4. Ice with a cream cheese icing.
