INGREDIENTS
- 6 med. size potatoes
- 3/8 c. milk
- 2 eggs
- 2 tbsp. chopped onions
- 1 tsp. salt
- 1 c. flour
- 1/2 tsp. baking powder
- Bacon fat or butter
DIRECTIONS
- Grate potatoes or use blender. When grated, add milk and potatoes in bowl.
- Beat eggs and stir into potatoes.
- Stir in onions.
- Sift dry ingredients and stir into potatoes to make a thick mixture.
- Drop into hot pan of bacon fat or butter, frying both sides.
Note: Potatoes were grated on homemade graters; a piece of tin with holes made with a hammer and nail, about 1/4 inch apart. You stopped grating well before your fingers were in danger. The stub potatoes went into "Potato Soup".
