INGREDIENTS
- 12 fresh or frozen peach halves
- 2 c. sifted flour
- 1/4 tsp. baking powder
- 1/2 tsp. salt
- 1 c. sugar
- 1/2 c. butter
- 1 tsp. cinnamon
- 2 egg yolks
- 1 c. sour cream
DIRECTIONS
- Start oven at 400 degrees F. and get out an 8inch square pan.
- Sift flour, baking powder, salt and 2 tablespoons sugar together in mixing bowl. Cut in butter with pastry blender until mixture looks like coarse cornmeal.
- Pat an even layer of this crumbly pastry over bottom and halfway up sides of baking pan. Press firmly until it holds.
- Arrange peaches over bottom pastry; sprinkle with a mixture of remaining sugar and cinnamon. Bake 15 minutes.
- Pour a mixture of beaten egg yolks and sour cream over top.
- Bake 30 minutes longer. Serve warm or cold.
