INGREDIENTS

  • 12 fresh or frozen peach halves
  • 2 c. sifted flour
  • 1/4 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. sugar
  • 1/2 c. butter
  • 1 tsp. cinnamon
  • 2 egg yolks
  • 1 c. sour cream

DIRECTIONS

  1. Start oven at 400 degrees F. and get out an 8inch square pan.
  2. Sift flour, baking powder, salt and 2 tablespoons sugar together in mixing bowl. Cut in butter with pastry blender until mixture looks like coarse cornmeal.
  3. Pat an even layer of this crumbly pastry over bottom and halfway up sides of baking pan. Press firmly until it holds.
  4. Arrange peaches over bottom pastry; sprinkle with a mixture of remaining sugar and cinnamon. Bake 15 minutes.
  5. Pour a mixture of beaten egg yolks and sour cream over top.
  6. Bake 30 minutes longer. Serve warm or cold.
