INGREDIENTS
- 4 c. mashed pumpkin
- 4 c. brown sugar
- 4 heaping tbsp. flour
- 2 tsp. each cloves, nutmeg & allspice
- 1-1/2 tsp. ginger (scant)
- 4 eggs
- 4 c. milk
- 4 or 5 unbaked pie shells
DIRECTIONS
- Mix first 5 ingredients in large kettle (a Dutch oven is good).
- Beat eggs and milk together. Add to first mixture.
- Cook over low-medium heat until filling bubbles and begins to thicken, stirring frequently.
- Fill unbaked pie shells with hot filling. Bake at 450 degrees F. for 45 minutes (can reduce heat to 400 degrees F. after 15 to 20 minutes).
YIELD: Approximately four pies.
